Slow Cooker Lamb and Bean Casserole
Serve 4
Cook on low for 6 to 8 hours
500g/½lb lean lamb cubes or 4 large chops trimmed
1 large onion chopped finely
2 cloves of garlic crushed
2 carrots sliced
2 ribs of celery sliced
440g/14oz can crushed tomatoes in juice
2 cups of cooked or 440g/14oz can haricot beans, drained
1 Tbsp tomato paste
1 tsp dried mixed herbs
½ C beef or vegetable stock
freshly cracked salt and pepper to taste
Combine all ingredients in the slow cooker and cook on low for 6 to 8 hours.
