The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World

Slow Cooker Honey Chilli Chicken

Looking for a "quick prep" recipe using any kind of chicken pieces and ingredients you'll have on hand?

Slow Cooker Chilli Chicken
3 Tbsp honey
2 Tbsp Sweet Chilli Sauce
1 tsp ground ginger
1 Cup of chicken stock
4-8 chicken piece - to make one layer of chicken only

Put the first three ingredients into the slow cooker and combine, stir in chicken stock, add chicken.
Turn on slow cooker, cook on low for 7-8 hours.

You can thicken the sauce with 1 Tbsp of cornflour prior to serving if you prefer a thicker sauce.

Serve over rice, risoni or noodles with a stemmed greens or a crisp salad.

Crock Pot Mac N Cheese

When my nephew and niece come for the occassional day in the school holidays, when it's cooler, we like to make something hot for lunch.

Macaroni Cheese is their favorite, and it's super easy in the crock pot!

This is a one pot meal the whole house will enjoy!

Crock Pot Mac N Cheese

1/4 Cup flour
1 tspn salt
1/4 tspn pepper
2 Tbsp minced onion flakes
1/2 tspn paprika

3 Cups milk

1 Cups grated cheese
2 Cups uncooked macaroni

Add the first 5 ingredients into a saucepan. Whisk in the milk gradually, keep whisking until no lumps remain. Heat and stir until boiling and thickened.

Add cheese and macaroni, stir to combine. Turn into 3-1/2 quart or 3.5L slow cooker, cover and cook on low for 2 to 2-1/2 hours or on high for about 1 hour.

Makes 4 cups.

West Bend Oblong Slow Cooker

In a recent post we discovered a slow cooker than lets you brown the onions and meat without dirtying an extra pan to do it. For the simple reason that I don't want extra dishes to do as part of my meal prep time, I have almost never browned things before adding them to my crock pot. But the interior of the West Bend Oblong Slow Cooker stainless steel insert has a non-stick coating... so it both practical and possible to brown your ingredients on the stove top, directly in the slow cooker stainless steel insert, before placing it on to the heating base.

The heating base is able to be used separately to – as a small non-stick griddle. It's ideal for cooking up a little bit of bacon, some sausage links, tomatoes and some scrambled eggs for breakfast.

The West Bend Oblong Slow Cooker Gives You Total Control, Total Flexibility!

The cooking temperatures are controlled with a dial – as you would expect to find on with a griddle. Heat setting 2 is warm, 3 is low, 4 is medium and 5 is high. This means you have the ultimate in flexibility of choosing you rate of cooking. For example if you are starting the casserole early in the day, you can just select low and leave it. A little later in the day you might want to select medium for a while and then turn it down to low. Mid afternoon you can start the dish off on high and then turn it down, and it will still be cooked – just use the instructions to work out how long at each setting.

Chocolate Fudge Pudding

This is my nephews favorite crock pot dessert recipe ever! I am asked for this recipe by everyone I have shared this dessert with – because it is prepared, cooked, and travels in the slow cooker it is perfect dessert to take out with you to share - especially if you have a slow cooker like this one. Chocolate Fudge Pudding is often requested when we are invited to pot luck dinners, and it is so easy to make!

I make the recipe right into the slow cooker insert – no extra dishes!

Slow Cooker Chocolate Fudge Pudding

2 Cups plain flour
1-1/2 Cups brown sugar, packed
4 Tablespoons cocoa
4 Teaspoons baking powder
½ Teaspoon salt

1 Cup milk
4 Tablespoons oil
1 Teaspoon vanilla essence

1-1/2 Cups brown sugar, packed
4 Tablespoons cocoa
3-1/2 Cups hot water

Get the slow cooker base out and find a measuring jug that 4 Cups of liquid. Half fill your kettle and set it to boil.

Place the first five dry ingredients into the slow cooker base and stir to combine.

Measure the wet ingredients into the 4 cup jug - start by adding the milk, then add the oil and vanilla. Stir and add to the dry ingredients in the slow cooker, stir well to combine. (Don't worry about scraping down the sides.)

Quickly and roughly distribute the second measures of brown sugar and cocoa evenly over batter, don't flatten, mix or stir! Place insert into slow cooker base.

Using the rinsed, wet ingredient measuring jug, add your measure of hot water from the hot kettle, hold a spoon just above the surface and gently pour (don't splash yourself) the water onto the spoon.

Do not stir! Cover and cook on high for 3 hours until a toothpick comes out clean.



This crock pot dessert recipe comes up to about an inch away from the top of the insert when cooking. It's a big desert. If you are dishing it out to a family, you will easily feed 12, maybe even more if you are generous with the cookies n cream ice cream!

I try to time the end of cooking time to be when I am serving the main course. Standing time (not left in warm mode, turned off) seems to make the chocolate sauce thicken, and of course, it doesn't make the ice cream melt instantly, which we prefer too!

This slow cooker dessert recipe was prepared in a 3.5 quart crock pot.

You can halve the ingredient quantities for this crock pot desert recipe. Halved, it will cook in 90 minutes and serves 6-8.
